Strawberry Spinach Salad w/Pepper Jam Dressing

Servings: 6

Ingredients

  • 16 Ounces Baby Spinach
  • 1/4 Cup Red Onion, thinly sliced
  • 1 Pound Strawberries, thinly sliced
  • 1/4 Cup Pecans, toasted
  • 1/4 Cup Golden Raisins
  • 3 Tablespoons Cranberry Pepper Jam
  • 2 Tablespoons Balsamic Vinegar
  • 5 Tablespoons Extra Virgin Olive Oil

Instructions

  • Melt pepper jam, (microwave or stove-top), then add vinegar and oil to taste. Mix thoroughly and set aside.
  • Place all salad ingredients in a large salad bowl, add the dressing and toss. Let rest for a few minutes, then give it another toss before serving .
  • ENJOY! (And enjoy some more – it’s SALAD after all).
