Strawberry Spinach Salad w/Pepper Jam Dressing

Ingredients
- 16 Ounces Baby Spinach
- 1/4 Cup Red Onion, thinly sliced
- 1 Pound Strawberries, thinly sliced
- 1/4 Cup Pecans, toasted
- 1/4 Cup Golden Raisins
- 3 Tablespoons Cranberry Pepper Jam
- 2 Tablespoons Balsamic Vinegar
- 5 Tablespoons Extra Virgin Olive Oil
Instructions
- Melt pepper jam, (microwave or stove-top), then add vinegar and oil to taste. Mix thoroughly and set aside.
- Place all salad ingredients in a large salad bowl, add the dressing and toss. Let rest for a few minutes, then give it another toss before serving .
- ENJOY! (And enjoy some more – it’s SALAD after all).
